salad burnet

Poterium sanguisorba

Plants have gorgeously serrated foliage and grow to about 1′ high and wide. Not fussy, they look great in pots, too, and look just as freah in August as they do in spring. An ingredient in both salads and dressings burnet has a cucumber-like flavor, and is considered interchangeable with mint leaves in some recipes. Use the youngest leaves, as they tend to become bitter as they age.

Root is used to stop nosebleeds, and is applied topically to treat burns and insect bites.
